Peanut soup is a recipe originating from Uganda and it is from there that comes this recipe.

For 4 people
Preparation: 10 minutes
Cooking: 10 minutes



250 g peanuts
1 small onion
½ litre of vegetable stock
¼ litre milk
1 teaspoon of cornstarch
½ red chilli finely minced


Peel the onion and crush in a blender
When it is pureed, add the peanuts
Dilute the cornstarch with a bit of the milk
Warm the milk in a saucepan
Add the diluted cornstarch and mix well until you get a smooth sauce
Add the stock, the peanuts, the chili and the salt
Bring to the boil as you continue to stir
Leave to simmer on low fire for 5 minutes
Crush the soup in the blender again before serving.
