Colombo de Poulet – Ingredients
1 1.5 kg whole chicken
3 tablespoons of powder of colombo
60g of white grapes
4 limes
1 onion
2 cloves of garlic
1 fresh chili
2 bay leaves
2 tablespoons of oil
Salt, pepper
Colombo de Poulet – Preparation
Cut the chicken in 8 pieces
Add salt and pepper to the chicken pieces
Sprinkle the juice of 3 limes
Marinate for 1 hour at room temperature, stirring occasionally
Peel and chop the onion
Peel and chop the garlic cloves
Heat oil in a frying pan with the whole chili
Fry in oil the chicken without the marinade until golden for 10 minutes
Add onion and garlic
Sprinkle the colombo powder
Mix for 2 minutes
Drizzle with marinade and 30 ml water
Add the bay leaf
Cover it and let it cook for 30 minutes
Add raisins
Continue cooking for 15 minutes
When serving, sprinkle the remaining lemon juice
Serve with Creole rice.
