Coco chicken is a recipe that comes to us from the French Antilles.

Coco Chicken – Ingredients

A whole chicken
1 coconut
1 onion
1 garlic
1 chili
2 parsley branches
3 tsp oil
1 glass of water
Salt, black pepper

Coco Chicken – Cooking Instructions

  • Cut up the chicken in bits and fry in oil until golden;
  • Add diced onion, garlic and minced parsley
  • Add salt and pepper
  • Wet with the water and leave to simmer for about 10 minutes
  • In the meantime, extract the coconut juice: break the coconut, remove the pulp, peel and grate
  • Mix the grated pulp and the juice, then press them to collect a white liquid that is the coconut milk
  • Add the coconut milk to the chicken and add the whole chili, without crushing or piercing it during cooking
  • Cover and leave to simmer for 10 minutes
  • When serving, decorate the chicken with the remainder of the grated coconut
  • Serve with white rice
